Vanilla Whoopie Pies with Marshmallow Filling

Hi Everyone!
This week I have decided to have a go at making whoopie pies! These treats are really popular over in America and have been described as the 'new cupcake' but they aren't as well known over here in the UK. I have tried them in Marks and Spencer and Starbucks so they are available here if you look hard enough! I searched online for recipes and found a lot! I finally settled on these pies which are made up of a vanilla sponge with a marshmallow filling and then topped with icing and hundreds and thousands.

INGREDIENTS
For the Sponge:
75g Butter
1 Large Egg
150g Caster Sugar
150ml Buttermilk or Soured Cream
1 tsp Vanilla Extract
275g Plain Flour
3/4 tsp Bicarbonate of Soda
For the Filling:
100g Marshmallows
3 tbsp Milk
125g Butter
For the Topping:
150g Icing Sugar
2-3 tbsp Lemon Juice or Water
Approximately 2 tbsp Hundreds and Thousands or Sugar Strands

METHOD
1. Pre heat oven to 180C/ Gas Mark 4 and line 2 baking strays/ sheets with baking paper.
2. Melt the butter in a small pan and set aside.
3. Whisk the egg and caster sugar together until really light and fluffy.
4. Whisk in the butter, buttermilk and vanilla and continue to whisk until all of the ingredients have been incorporated.
5. Now sift the flour and bicarbonate of soda together in a bowl then fold this into the wet mixture.
6. Use an ice cream scoop to measure out the mixture onto the trays. In order to make 8 pies you will need 16 halves.
8. Bake in the oven for approximately 15 minutes until the pies are a light golden colour.
9. Remove the pies from the oven and allow to cool on the trays before transferring them to a wire rack to cool thoroughly.
10. To make the filling, first melt the marshmallows with the milk over a low heat, stirring until smooth and then leave this to cool for 10 minutes.
11. Now beat the butter in a bowl until creamy then beat this into the marshmallow mixture until smooth.
12. Use a spoon, knife or piping bag to sandwich the pie halves together.
13. To make the topping, sift the icing sugar into a bowl and then add 2 tbsp of lemon juice or water to this, then a little more and stir to make a glossy, running icing.
14. Spread a little icing over each pie then sprinkle each one with sugar strands or hundreds and thousands. If you wish you can skip the icing and just gently roll each pies sideways through a bowl of hundreds and thousands or sugar strands so that they are picked up by the filling.


You now have 8 super tasty whoopie pies! I would definitely have a go at making them, especially if you haven't had one before. I am now busy searching for more whoopie recipes, so look out for that!
